Gestalt shifts happen when our perspective abruptly alters as a result of a change in context or focus.
Picture yourself staring at an image that, although it looks like one thing at first, is actually something else that your brain eventually recognises. When a new pattern or structure suddenly becomes apparent, our perception undergoes a gestalt shift. Once you see either interpretation, you cannot unsee them because the mind has switched paradigms.
